Features
The distinguishing features of "Sae-doki" are its vibrant green color and rich umami flavor. By carefully grinding tea leaves, which are selected according to strict standards, with a traditional stone mill, we achieve an ultra-fine texture that blends beautifully with water. With the first sip, a vivid sweetness and pleasant bitterness spread in perfect balance, leaving a crisp, clean finish.
Cultivation Methods
We pay meticulous attention to every step, from cultivation to final production. Our tea fields are located on a plateau blessed with pristine water sources and rich soil, and we block direct sunlight for several weeks before the new buds are picked. This cultivation method, known as "Covered Cultivation" (Hikokuzai-bai), allows the tea leaves to accumulate Theanine, a rich amino acid, which enhances the characteristic umami and sweetness of Matcha.
Stone Mill Grinding
We continue to employ the traditional stone mill method that has been handed down for over 150 years. Unlike modern machinery, this method preserves the tea leaves' delicate aroma and texture while achieving ultra-fine grinding. Every grain is meticulously ground, producing a smooth texture and a rich umami that cannot be replicated by any other method.
How to Enjoy
Traditional Usucha
Whisk 2g of matcha with 70ml of hot water (80°C) using a bamboo whisk. Perfect for experiencing the pure, authentic flavor.
